Truffled Macaroni Cheese

Truffled Macaroni Cheese

Truffled Mac & CheeseRecipe serves 6

3 Tbsp. butter
2 minced garlic cloves
3 cups heavy cream
2 oz. gorgonzola cheese (grated)
2 oz. goat cheese (grated)
8 oz. fontina cheese (grated)
4 oz. parmesan cheese (grated)
4 tsp. Ty Caton’s White Truffle Oil
1 lb. macaroni
3/4 cup Panko breadcrumbs

Begin by greasing a 9” x 13” dish and preheating the oven to 375 degrees. Boil a large pot of water and once boiled, cook the pasta for 5 minutes only and then drain.

Melt the butter in a large pan, add the garlic, cook for around 30 seconds, then stir in the heavy cream. Bring to a simmer and add in the grated cheeses. Continue to stir until all cheeses are melted and then add the truffle oil. Make sure to taste it and ensure that it is flavorful enough for you. If not, try adding a little more at a time. Mix in the pasta and transfer to the previously greased dish. Spread the breadcrumbs evenly across the top and bake for 20-25 minutes. Allow to cool slightly and serve with a delicious glass of our Petite Sirah.
